Beer Battered Fish
Beer Battered Fried Walleye

Ingredients
1 cup flour
1/2 t seasoning salt (Lawry's)
1/2 t paprika
1/2 t garlic powder
8 oz light beer
1/4 cup water
1 1/2 pounds walleye
cornstarch, for dusting
 
Directions
1. Combine flour, seasoning salt, garlic powder, and paprika in a large bowl.
2. Add beer and 1/4 cup water. Whisk to make a smooth batter.
3. Preheat cast iron pan to hot
4. Pour 2" depth of oil in fry pan. Heat until temperature registers 350 degrees on a deep fry thermometer.
5. Working in batches, dust fish with cornstarch, dip in batter, shake off excess, and fry, turning constantly.
6. Cook until deep golden brown - about 5 minutes.
7. Transfer fried fish to a rack to drain.
