Walleye Dip

Ingredients
2 walleye fillets
1/2 t dried dill or 2 t fresh dill
3-4 peppercorns
1 8-0z cream cheese
1 cup shredded cheddar cheese
1/2 cup mayo
1 t hot sauce
1 t chipotle hot sauce
1 T chopped fresh chives
1 T chopped fresh parsley
1/2 lemon
 
Directions
1. In a small fry pan, poach fillets in 1 cup water seasoned with dill and peppercorns. This should take about 4 minutes. When the fish turns white it is done. Remove from water and drain on paper towel.
2. Combine softened cream cheese, cheddar, mayo, hot sauces, chives, parsley, and fish. Mix well.
3. Pour into glass pie plate.
4. Bake 400 degrees F 10-15 minutes.
5. If you prefer a crusty top, broil for an additional five minutes.
